FLORENCE (Italy)- The Espresso Academy was started within the Torrefazione Mokaflor srl of Florence.



The idea was created from the concept of the ChiaroScuro project and on the experience gained in the Franchising ChiaroScuro Concept.
From the main project, the school has the wish to know depth in order to innovate deeply. ChiaroScuro in fact is created in order to connect and to contain a series of ideas of which is single origin coffee, the flavoured coffees, the deserts and the chocolate with coffee, intuition that at the moment and over time are fashionable in the world of coffee.
The structure of the same school arises from the concept. If no franchising system can take place unless their partners are trained, then in the ChiaroScuro concept this aspect would be of particular importance and has appeared obvious. The offerings that are found in the chain are so different, innovative and often creative that the collaborators and the managers of the premises cannot avoid knowing very well the equipment, products and techniques that they will have to master. Moreover, among the values that carry this project ahead, there is the will to think of the culture of the world of coffee, tea and chocolate, as witnessed by the many curious treats that are found on the menu of the premises and from the rich information of the packaging of the company. And who, first of all, must transmit this culture if not the men who are part of the project?
The school once thought of as a seminal idea appears clearly that the location could not have been better. The Espresso Academy, situated inside of the Torrefazione, would have experienced the flow and the work. Beside the classrooms there arrives the raw coffee from the countries of origin. It is possible to see the works, the toasting of the coffee and the preparation of mixtures. In the same rooms where the courses are carried out, new mixtures would have been experienced and new offerings, new packaging conceived and new coffee machines figured out.
And then around there was the basic added value, one of the most beautiful cities of the world: Florence.”
Beyond the value and the location however teaching means competence. It is enough to barely know the coffee world in order to understand that the continents make it up are numerous and vast, and that the exploration of just one of these continents could represent the work of a lifetime. For this reason it was thought to be part of the project there must be people who from the exploration of a single continent, of a single field of knowledge have made it their passion and life’s work.
For the botany courses, of blending, toasting and tasting it could not have been better conceived than the thirty years of experience in the field of Andrea Bernini, the head of the company and father of the ChiaroScuro project. For the course of getting to know and maintain the coffee machines and the equipment men have been contacted from companies at the vanguard of the field. The course of latte art is followed, indeed designed, with the happy hand of Natalia Vagelli, the professional who follows the openings and the quality of the ChiaroScuro bars in the world. And finally, the coffee cocktail lessons are structured by the FIB, (Italian barman federation) that in their courses follow the same line of interaction
and right mix between theory and practice that is at the centre of the Esspresso Academy course.
